Take Me Out To The Ball Game!

Last night was Faith and Family Night at Bowling Green Ball Park and Mahlon and I thought it would be the perfect night to take Harrison to his first baseball game!

What's For Dinner?

That is the question that Mahlon and I ask each other every night! Usually we end up grilling, eating sandwiches or going out to dinner. Now that Summer is here and I am going to be home all day every day, I plan on cooking dinner every night throughout the week! To help myself stick to this goal I made a weekly menu this morning,
OK, so Tuesday we will be going out to dinner to celebrate our 2 year anniversary (Thanks Aunt Lauren for keeping Harrison for a few hours!) but other than that we will be eating at home!

It is a slow cooker recipe (yay!) so I've already got it cooking!
Here's how it looks so far:

Ingredients:
PAM® Original No-Stick Cooking Spray
1 teaspoon Pure Wesson® Vegetable Oil
1/4 teaspoon salt
1-1/4 pounds boneless skinless chicken thighs, cut in quarters
1/4 cup Peter Pan® Creamy Peanut Butter
1/4 cup water
1/2 teaspoon garlic powder
1 can (10 oz each) Ro*Tel® Original Diced Tomatoes & Green
Chilies, undrained
1 pound (2 medium) sweet potatoes, peeled, cut into 1-1/2 inch
pieces
2 cups frozen bell pepper and onion strips (from 16-oz pkg)


Directions
1. Spray inside of 4-quart slow cooker with cooking spray. Heat oil in 10-inch skillet over medium-high heat.
Sprinkle salt over chicken. Add to skillet; cook until browned, stirring occasionally. Stir in peanut butter,
water, garlic powder and undrained tomatoes. Cook until mixture is blended and chicken is coated.
2. Layer sweet potatoes and frozen vegetables in slow cooker. Top with chicken mixture. Cover; cook on
LOW 7 to 9 hours or until chicken and vegetables are very tender. Gently stir to mix.

Splish Splash!

This Saturday was the perfect day for Harrison to try out his pool for the first time!

With a little reassurance and the loss of the floppy hat, he discovered that he loved the pool! 


"Can Orson get in the pool with me?"

He was a pro at crawling through the water without getting his face wet.

Watch Me Grow; 8 Months!

This sweet boy is 8 whole months old!

What's new here since last month?
Harrison has learned how to sit himself up from laying down.
He is SO close to crawling! He will scoot backwards and get up on his hands and knees and rock but has yet to actually crawl. 
He had his first "dinner" the other night, Chicken and Sweet Potatoes by Gerber. He wasn't that wild about it! 
He has 2 teeth that are all the way through. 
He LOVES to swing! He got an outdoor swing for Easter and is loving every minute his spends in it! 
Although he isn't crawling, he is VERY mobile! His new favorite trick is to wiggle his way over to and under the Jumperoo and then pull all the toys out of his toy basket that sits behind the Jumperoo- like this:

I love how he is looking at me like "What? Why are you taking my picture now?" LOL!
He is still sleeping through the night about 3 maybe 4 times a week. 
And as always, being absolutely adorable!
We love you, sweet growing boy!
